Vineyard
The grapes come from vineyards situated 130 metres above sea level in Zwergacker, with the typical Seewinkelgrind soil of gravel and pebbles. The vines are between 23 and 33 years old. The yield is 50 hl per hectare.
Vinification
The bunches are destemmed upon arrival at the winery. The temperature-controlled fermentation starts spontaneously in stainless steel tanks. About 30% of the grapes undergo fermentation and maceration according to the 'méthode semi-carbonique'. The malolactic fermentation is followed by a 6-month aging period in used 225-liter oak barrels.
