Vineyard
This cuvée has only been produced since 2009, and only in the best years. The grapes come from one of Peyrassol's best plots: a 7-hectare walled vineyard at the foot of the Knights Templar building. The gravelly soil consists of red clay and limestone dating from the Triassic period. Yields are very low.
Vinification
The bunches are picked in the cool morning hours and transported in small crates to the wine cellar, where they are destemmed. The lightly crushed grapes are gravity-fed into the fermentation tank. Fermentation occurs at 28°C and takes place separately for both varieties. After 3 to 4 weeks, pressing follows, which is then succeeded by 12 to 14 months of aging in egg-shaped concrete tanks and large foudres.
