Vinification

Manual harvesting of old vines, selection and fermentation with natural yeasts. Spontaneous alcoholic and malolactic fermentation. Post-fermentative maceration for 2 months. 70% of the wine fermented and aged in clay amphorae, 30% aged for 16 months in French oak. No temperature control.
