Vineyard
A small, old Grenache parcel planted in 1946. The vines are goblet-trained and yield very low quantities of airy, concentrated bunches. The vineyard is sheltered from the mistral by pine trees. The soil consists of marl and clay-sandy soils from the Oligocene. This unique micro-terroir imparts finesse, structure, and natural freshness.
Vinification
The grapes are not crushed but fully destemmed. Fermentation is slow and by infusion, preserving natural yeasts and with minimal intervention. Only small pump-overs are performed to keep extraction gentle. The wine is aged for 18 months in concrete tanks, followed by bottle aging in underground cellars. The goal is purity, tension, and terroir expression without artificial intervention.
