The plots, with a total area of 2 hectares, are located in Quinta da Leira and Tremoa, in Oliveira de Barreiros. The poor, granitic soil is situated 440 metres above sea level. The vines are between 23 and 40 years old and yield 6 tonnes of grapes per hectare.
Winemaking
The bunches are hand-picked. The Gouveio (Godello), Malvasia Fina, and Fernão Pires undergo co-fermentation. The Encruzado bunches are picked later and fermented separately. Vinification begins with a gentle pressing, after which fermentation starts in stainless steel tanks. This process takes place at 15 °C and lasts 3 weeks. The wine does not undergo malolactic fermentation and matures for 4 months on fine lees in stainless steel tanks. It contains 0.6 grams of residual sugar per liter.

De wijntraditie van de familie Canto Moniz strekt zich uit over een indrukwekkende periode van 150 jaar, geworteld in de weelderige omgeving van de Dão-regio. Maar het was pas rond de overgang naar het nieuwe millennium dat het vertrouwen in hun eigen vakmanschap voldoende was gegroeid om afstand te nemen van het coöperatieve model en zelfstandig hun wijnen op de markt te brengen. Hun beslissing om uitsluitend gebruik te maken van autochtone druivenrassen, gedijend in de arme, granieten en zandige bodems van de streek, heeft geleid tot wijnen die uitblinken in mineraliteit en frisheid.
